Pasta dishes: how to make lasagna from scratch
Lasagna is a favorite dish of many people and it can be easy to make. Before you start making your lasagna, you need to decide what type of lasagna you would like to make. Is it lasagna bolognese (with meat sauce), vegetarian lasagna, mushroom lasagna, or seafood lasagna? Once that decision is made, the next step is to make a list of the ingredients you will need. Before going to the market, check your grocery store at home. You will be surprised what you can find.
Do you want to use dry pasta, fresh pasta, locally made pasta or imported pasta? It's important to use a good quality lasagna so that it not only tastes good, but will stick together after you bake it and when you serve it. Fresh pasta can be purchased at your local Italian deli. The advantage of buying fresh pasta is that you can buy it in large sheets, which makes it easier to assemble your lasagna. If you buy dry lasagna, be sure to follow the cooking instructions on the package. If you buy lasagna fresh, you will only need to cook it for 1-2 minutes or not cook it if you use a generous amount of sauce when making the lasagna.
Next, decide the type of sauce to use. You can use your favorite homemade pasta sauce or you can buy sauce made from the market or your local Italian deli. For a 9 x 12 skillet of lasagna, you will want to have at least a quart or more of sauce. My favorite is a mushroom sauce that has several varieties of เมนูเด็ดจากร้านเด็ด.
The other ingredients you will need are at least a pound of mozzarella cheese, a pound of ricotta cheese, and some grated Parmesan. To make the mozzarella easier to crush, put it in the freezer for about half an hour before crushing it. To make the ricotta easy to spread over the pasta, first make a béchamel (medium cream sauce) and combine it with the ricotta. A cup of cream sauce made with 2 tablespoons of butter and flour and a cup of milk should be enough to combine with a pound of ricotta cheese. Season to taste with salt and white pepper.
After the pasta is cooked and drained, place it in plastic wrap in a single layer so the pieces don't stick together. Prepare your lasagna pan by lightly greasing with a small amount of olive oil. Gather all of your ingredients so they are within reach of the pan and your mounting location. To make the lasagna, make sure you have all of the following prepared and arranged first:
Greased lasagna pan or 9x12 baking dish
Lasagna noodles cooked and separated
A quarter or more of your favorite sauce
A pound or more of grated mozzarella
Ricotta combined with bechamel sauce
Parmesan
